Why we write this stuff down

Most catering decisions are made in a hurry, often under pressure from a venue or a wedding planner who is working to their own timeline. The result is that small but important choices — portion size, staffing ratios, wet-weather contingency, dietary handling — get skipped over in the excitement of planning the fun parts.

We started this journal to fix that, slowly. Each article picks one narrow subject and unpacks it properly, using failures and near-call it that we have seen in eighteen years of catering in the tropics. No sponsored content, no product plugs, no cheesy listicles.

Get in touch first and we will almost certainly say yes, with a clear credit line back to this page. Venues, wedding blogs and local business newsletters have all republished our posts before and it is usually good for everyone. Blanket copying without attribution is the only thing we ask you not to do.

Occasionally, when the author has something genuinely useful to say about catering, events or local produce. We are not interested in SEO link placements or thinly disguised product plugs, and we do not publish anything we would not happily share with our own clients. If you have an idea, pitch it and let us decide.

Honestly, not on a strict schedule. We publish when there is something worth saying, which usually means every few months rather than every week. You will never get flood-email from us, and the quarterly newsletter is the only recurring contact we send. Better four useful posts a year than fifty posts nobody reads.

Most of the general advice — questions to ask a caterer, how to handle dietary requirements, why long buffets are usually a bad idea — travels fine anywhere. Local produce and weather specifics are obviously tailored to Tropical North Queensland, but the principles around planning and communication are universal.
